Parvara

Parvara is located on L B S Marg in Mundhwa, which is a part of town that has changed a lot lately. There are many workshops and offices around here, so we get a lot of workers coming in for their lunch break. The space is simple with long tables and plastic chairs that are easy to wipe down. We serve mostly rice and dal and the usual vegetable dishes that people eat every day. The kitchen is right behind a small partition and you can hear the pressure cooker whistling all morning. We don't have a printed menu because we just make whatever is fresh that day. The sun hits the front of the shop pretty hard in the afternoon, so we usually pull down the blue tarp a little bit to keep the heat out. The ceiling fan wobbles a bit when it's on high speed, but it keeps the air moving. We spend the mornings chopping vegetables and getting the big pots of water boiling. Most of the customers are in a rush to get back to their jobs, so we try to serve them quickly. It is a bit loud with the traffic from L B S Marg right outside, but once you are eating, you don't notice it as much. We just keep things clean and make sure there is enough food for the noon rush. It is a plain place for a plain meal.
