Osai Kitchen

You can find us on Panvel Station Road over in Bardoli 4. Being Osai Kitchen means we are usually up before the sun to get everything ready. The location near the station is good because there are always people walking past, mostly folks catching the early trains or coming home late from work. The kitchen is small and it gets quite hot when the stoves are going. We don't have a big menu or anything like that. It is just basic stuff that we know how to make well. The sounds from the station come through the door all day, with the train whistles and the announcements. We spend a lot of time chopping vegetables and cleaning the pots. It is messy work but someone has to do it. The floor is usually a bit wet from washing up and we always have a towel over our shoulders. We don't really have a big team, just a couple of us doing the cooking and the serving. Some days the ingredients we want aren't at the market so we have to change things up on the fly. It is just a simple place for food. We aren't looking to be famous or anything. We just want to finish the day with empty pots and a clean kitchen. It is hard work but it feels okay at the end of the shift when we finally turn off the lights and lock the front door for the night.
