The heat from the tawa is the first thing I feel every morning at Omkar Dosa Centre. We’re located near Vikrant Com on Tapovan Mandir Road, which is a spot that gets a lot of foot traffic. I spend most of my shift behind the hot metal surface, spreading batter and scraping it off. It’s a repetitive motion, but you get used to it after a while. The noise from Tapovan Mandir Road is constant—horns, people talking, and the occasional temple bell. We don't have a big menu or anything complicated. We just do what we do on that one big stove. The batter has to be just right, or it sticks, and then I have to spend time cleaning the whole surface again. It's a small place, so when it’s crowded, people are basically standing right next to the cooking area. You see a lot of office workers from Vikrant Complex coming over for a quick bite during their breaks. They’re usually in a hurry, so we try to keep things moving. By the end of the night, my apron is covered in splashes, and the floor needs a good scrubbing. It’s not glamorous work, but it’s steady. We’ve been here in Pimpri for a good bit now, and we know the rhythms of the street. It’s just us and the stove, making sure everyone gets fed. We don't bother with much else besides the food.
