Setting up Ninad Pan Shop at Sangavi JV Diamond Circle on LH Road 1 was a big step for us. The circle is always full of cars and bikes going everywhere. Our little shop sits right there, watching all the chaos happen. We start early in the morning, usually before the sun gets too strong. There is a lot of prepping to do, like washing the leaves and sorting the nuts. I usually have a radio playing in the background to pass the time when it is quiet. Most of our regulars live right around here and they stop by for a chat while I fix their pan. It’s not a huge place, just enough room for the supplies and a spot to stand. We don’t have fancy signs or big lights. People just know where we are because we’ve been here a while. Sometimes the rain makes things difficult because the water splashes in from the road. We just put up a small tarp and keep going. It’s a simple business. My brother helps out when I need to go run errands or get more stock from the market. We don't do anything special, just make the pans the way people like them. Sometimes they want more lime, sometimes less. I try to remember what everyone prefers so I don't have to ask every single time they walk through the door. It makes the day go by faster when you know the people you are serving.
