Nayan Chaupati is a small spot we run over in the Baner Warje Malwadi area. It isn't anything fancy, not like those big restaurants you see in the city malls. We just have a basic setup where people can come and get something to eat without any fuss. I started this place because I wanted to be my own boss, and it has been quite a journey. The days are long and we usually start prepping everything well before the sun goes down. Once evening hits, the crowd starts coming in. It’s mostly families from the nearby apartments and some office workers who are tired after a long day. The atmosphere is loud and messy, but that’s what a chaupati is supposed to be like. We don't have a big team of waiters. It’s just me and a couple of guys helping out. Sometimes the service is a bit slow when everyone arrives at once, but we do what we can. We use local ingredients and try to keep things fresh every day. There are no corporate rules here. If we’re tired, we might close a bit early, or if people are still hanging out, we stay open. It’s just a simple business in a busy part of town. We’ve seen the streets change a lot around here, but we are still in the same spot, doing the same work every day. It is just how things go.
