Our kitchen is located at 361 Shukrawar Peth on Anand Nagar Road. We are in the Ratna Nagari area, right next to Hotel Shinde, which helps people find us. The work here starts very early, usually before the sun even comes up. The first thing you notice is the smell of spices and the sound of people chopping onions. We handle food for different types of local gatherings and events. We use these massive steel pots that are quite heavy to move around when they are full. It gets very hot in the kitchen once all the stoves are going at the same time. We do not have a printed menu with professional photos. We just tell our customers what we are able to cook for them that week. Most of our ingredients come from the local market nearby every morning. My hands usually smell like garlic and spices for the whole day, no matter how much I wash them. We pack everything into containers and load them onto the transport vehicles. The traffic on Anand Nagar Road can be a real problem, so we have to plan our departures carefully to avoid being late. It is a family-style operation with a small crew that has worked together for a long time. We do a lot of the grinding and mixing by hand because that is how we have always done it. It is just honest work.
