Mankar Dosa

We’ve been making dosas at Vadgaon Budruk 8 for a long while now. Mankar Dosa isn't a fancy restaurant, it's more like a place where you just go to get a quick, hot meal. The batter is made fresh every day, and we go through quite a lot of it. You can usually hear the sound of the tawa scraping from the street. It’s a simple setup. We’ve got a few workers who’ve been flipping dosas here for a long time. They know the rhythm of the place. Most of our customers are students or people working nearby who just want something filling and cheap. We don’t have a lot of seating, so people often just stand and eat or take it to go. It’s busy, especially in the evenings when everyone is heading home from work. We don’t do any big promotions. If someone likes the dosa, they tell their friends, and that’s how we get by. The area around Vadgaon Budruk has changed quite a bit since we started, but we’ve stayed right here. Sometimes the line gets long, and we have to tell people to wait, but nobody seems to mind too much. It’s just part of the experience. We keep the menu short so we can focus on what we know how to do. No meat, no fuss, just dosas and some chutney on the side. It’s honest work and we like seeing the regulars who stop by for their dinner. It works for us.
