We are set up in Bibwewadi, right at Dr Shivram Chawl. It is a very local spot and we like being part of this community. Our focus is on the kind of dosas we grew up with. We call it a camp because it is a simple, open setup. We don't have glass windows or air conditioning. You can watch us pour the batter and spread it thin on the hot iron tawa. The sound of the scraping metal is constant. We make our coconut chutney fresh every few hours because it doesn't stay good for long in the heat. Sometimes we run out of batter earlier than expected if the morning rush is particularly big. The chawl is a busy place with lots of families, so there is always someone stopping by for a chat while they wait for their food. We use old-fashioned steel tumblers for water. Our hands are usually busy with the ladle or the cleaning cloth. We don't bother with fancy uniforms; we just wear what is comfortable for working near a hot stove all day. The floor is just stone and we sweep it out multiple times a day. We've been here for years, and the recipe for our sambar hasn't changed once. It’s a bit spicy and has plenty of drumsticks in it.
