The morning starts with getting the kitchen ready and checking the supplies that come in. Balewadi is growing fast, with new buildings going up all the time, but inside here, things stay pretty much the same. We have the same staff who have been with us for years. They know how everything works. It’s not a quiet place, especially when the lunch rush starts and the kitchen gets steamy. We spend a lot of time making sure the ingredients are right because that’s what matters in Malvani cooking. The floor gets swept a dozen times a day and we’re always wiping down the counters. It’s a lot of manual labor, but it’s what we do. People come in, they sit down, they eat, and they leave. There’s a certain comfort in that routine. We don’t try to be something we aren't. We’re just a local eatery in Balewadi trying to do right by the people who choose to spend their money with us. Sometimes we run out of things or it takes a minute longer than expected, but that’s just how it is in a real kitchen. We just keep moving and making sure the next plate is ready.
