Mad About Khana Pure Veg

We start early here at Erandwane 123. The street is usually quiet when the first shutters go up, but it doesn't stay that way for long. Mad About Khana Pure Veg is basically a small kitchen where things happen all day. We spend a lot of time just prepping vegetables and making sure the counters are wiped down. The fans in here are old and they make a bit of noise, but they keep the air moving when the stoves are all on. People walk by on their way to work and sometimes they stick their head in to see if we’re ready. We don't have much of a fancy setup. It’s mostly just the heavy pots and the crates of produce that arrive on the back of a motorbike. Erandwane has changed a lot over the years with more cars and people, but our little corner stays pretty much the same. Most days are just a blur of steam and the sound of knives hitting cutting boards. We usually run out of stuff by the afternoon and have to start getting things ready for the evening crowd. It gets really hot in the back during the summer months. There’s always someone cleaning a plate or stacking chairs. It’s just how it goes here at 123. We’re not trying to do anything big, just keeping the kitchen running and making sure there’s enough for everyone who comes through the door. We just focus on the cooking.
