The kitchen gets really hot by noon, especially on those summer days in Khondhwa. We’ve been here at Aundh Road 1 for a while now, right near the main stretch where everyone is always in a hurry. You can hear the horns honking all day long. We start early, usually before the sun is fully up, getting things ready for the lunch crowd. It’s a lot of chopping and stirring. The walls have some marks on them and the floors are a bit worn from all the walking back and forth. We don’t really mind it, it shows the place is used. Some people come in and sit at the same table every single time they visit. We know their orders before they even speak. It’s not a fancy restaurant with white tablecloths or anything. We just have basic chairs and tables that get the job done. Sometimes we run out of things and have to send someone to the market real quick. That’s just how it goes here. The evening shift is a whole different vibe when the street lights come on. It gets a bit more crowded and we have to move faster. By the time we close up and head home, we’re pretty tired, but then we just do it all over again the next morning. It’s steady work and it keeps us busy in this part of town.
