Kille Sinhgad Dhaba

Kille Sinhgad Dhaba is out on Khed Shivapur Gowalia Tank Road. Being a dhaba, things are a bit more relaxed than a city restaurant. We have a lot of space, which is good because we get a lot of travelers coming off the road. The air out here is a bit different than in the middle of town, though the highway noise is always there. We spend our mornings getting the wood or gas ready for cooking and making sure the outdoor seating area is swept. It’s a lot of physical work. The kitchen is usually the loudest part of the place, with things clattering and pots moving around. We don't have fancy tablecloths; we use stuff that’s easy to clean because things get messy quickly. People stop by when they’re tired from driving and just want to sit down for a bit. The Gowalia Tank Road area gets quite dark at night, so our lights are a bit of a landmark for drivers. We see a lot of trucks and families on road trips. It’s an honest way to spend the day, even if it’s tiring. We don't have a big marketing plan or anything. We just open up, cook, and make sure there’s enough water for everyone. It’s a practical business for a busy road. The hills aren't too far off, which makes for a nice view when we finally have a minute to breathe.
