If you’ve been through Swargate lately, you might have seen us at Marol, specifically in Unit No 08 and 09. It’s a busy part of town. There is always a lot of noise from the traffic outside, but inside we are usually focused on the fryers. We spend our shifts breading chicken and making sure the timers are set right. It gets hot in the kitchen, especially during the lunch hour when everyone seems to arrive at the exact same time. We try to keep the line moving so nobody has to wait too long. The floor can get a bit greasy, so we are always mopping. We aren't doing anything complicated, just frying chicken and packing boxes for people on their way home or back to work. Unit 08 is mostly where we do the actual cooking, and Unit 09 is where people sit down to eat. Sometimes the soda machine acts up, or we run out of napkins, but we deal with it as it comes. Being in Swargate means we see all sorts of people every day. It’s a lot of standing on your feet and listening for the beep of the machines. We’ve been at this location for a bit now and we know the rhythm of the street. It’s a practical setup for a practical meal. Just us, the chicken, and a lot of hungry customers. We just keep our heads down and work.
