Shukrawar Peth is where we spend almost all our time. At 243/9, the kitchen is usually going by dawn. If you walk by early enough, you can smell the spices from way down the street. It’s a pretty tight space, but we’ve all learned how to dance around each other without causing a mess. Catering is mostly just a lot of heavy lifting. We spend our days carrying huge pots and crates of vegetables back and forth. My hands are usually stained from turmeric or something else. We don’t have one of those fancy offices with leather chairs. Most of the time, I’m on my feet checking if the rice is cooked or if the delivery van is packed in the right order. Shukrawar Peth is always crowded, so finding a spot to park the van is a struggle every single day. We just make it work. Local people come to us for their family functions because they’ve seen us in this same spot for years. We aren't trying to be the biggest catering company in the city. We just want to make sure the food is warm when it gets to the table. There are days when things go wrong, like a stove breaking or someone calling in sick, but we just keep pushing through. It’s hard work, and by the evening, we are all exhausted. But we’ll be back tomorrow to do it again. It’s just the way it is here.
