You can find us at shop number seven in the Rose Icon building. It’s on the ground floor, so it’s easy to walk right in. We spend most of our time around big pots of rice and meat. The kitchen is small but we make it work. Every morning starts with chopping onions and getting the spices ready. We don't have a big menu because we just focus on the biryani. It’s a lot of steam and heat in the back. Sometimes the smells from the spices get so strong you can smell them all the way down the street. We aren't a fancy restaurant with white tablecloths. It’s a place where you come to get a good meal and then go about your day. We’ve got a few tables for people who want to sit, but a lot of people just take their food home. We use the same recipes we’ve had for a long time. Nothing too modern or strange. We just keep the fire going and make sure the rice is fluffy. The staff is just a few of us who know how to handle the heavy pots. It’s hard work on your feet all day, especially when the lunch rush starts. We don't have a big corporate office or anything. A small desk tucked in the corner behind the counter where we keep the bills serves as our office. We also have to manage the charcoal and the huge burners which is a messy job. That is just how we do it here.
