Hotel Jalsa

Hotel Jalsa is over in Wakad at Jolly Maker II, shop number 27. It’s a decent-sized place but it fills up fast in the evenings. We’ve got about ten tables. Some of them wobble a bit, so we put folded cardboard under the legs. It’s not a five-star hotel, just a place to eat. We call it Hotel Jalsa because that’s the name we liked. The kitchen is in the back and it stays pretty loud with the clinking of plates. We have a few cooks who have been with us since we started at Jolly Maker II. They know how to handle the rush. Wakad has grown a lot lately. There are so many new buildings now. It used to be much quieter. Now there’s always someone looking for a meal at 27. We don't have a huge menu. We just stick to what we know how to cook well. Usually, it's just local stuff. Sometimes we run out of gas in the middle of a shift and have to wait for the spare cylinder. Those are the stressful moments. Most customers are patient though. We don't do any fancy plating or anything. Just put the food on the plate and serve it. It’s honest work. We clean the floors every night before we lock up. Then we go home and do it all over again the next morning. That’s life here.
