We are located in Triputi Estate 6, right in the middle of Bhavani Peth. It’s a busy area with a lot of workers and people moving things around. The kitchen is always going. We have big pans for frying and the sound of the oil popping is basically the background music here. It gets really hot, especially in the afternoons when the sun hits the front of the shop. We serve things that people can eat quickly. Most of the guys coming in only have a few minutes for their break. They want something hot and they want it now. We don't have many tables, so people mostly stand around or take their food back to their offices. The menu is written on a chalkboard that’s a bit faded. I try to keep the floors clean, but with so many people coming in and out, it's a constant battle. We buy our vegetables every morning from the market nearby. Cutting them up takes a lot of time before we even open. It’s just a few of us working here. We yell at each other sometimes when it gets busy, but we're friends. It’s hard work, but it keeps us busy. We just make the food, serve it, and get ready for the next day. The ventilation could be better, but we make do with what we have. It’s just how we run the kitchen here.
