Gayatri Kachchi Dabeli & Sandwich

You can find Gayatri Kachchi Dabeli & Sandwich on the main road in Nizampura along Bajirao Road. This is one of the busiest roads around and the traffic never seems to stop. We have our stall set up where we can see everything happening outside. We start by prepping the dabeli masala and roasting the peanuts. The smell of the spices on the hot tawa is very strong. We have piles of pav bread stacked up ready to be filled. When someone orders a sandwich we slice the bread and put in the potatoes and vegetables. We have a small toaster that we use to get the bread crunchy. It is a lot of repetitive work like spreading butter and chutney but we stay busy. People pull over their bikes on the side of the road to grab a quick bite. We have to work fast because there is not much room for people to wait. The heat from the stove makes the small space quite warm especially in the summer months. We keep the cold water jars filled for the customers. Sometimes the noise from the buses makes it hard to hear the orders. We just ask them to repeat it so we don't get it wrong. It is a simple setup on a very busy street corner and we have been doing this for a long time now. We just keep making the food as the day goes by.
