Gavhane Bandhu Dosavale

We are located over at Tabut Street, right by Survey No 729 in the Camp area. Some people call the surrounding parts Dhandari Kalan or Dera Bassi, but we’re mostly known as Gavhane Bandhu Dosavale because we’ve been making dosas on this side of town for a long time. It’s not a big restaurant with air conditioning or waiters in uniforms. Most of our work happens right in front of you on the large iron tavas. The smell of the batter hitting the hot surface is what people notice first. It gets pretty hot in here, especially in the afternoons, but that’s just part of the job. We start early, soaking the rice and lentils and getting the mix just right. There’s no secret to it, just doing it the same way every single day. The street outside can be quite chaotic with all the people moving through Camp, but inside we just focus on the orders coming in. Sometimes the line gets long and people have to wait on the pavement, but nobody seems to mind too much. We don’t have much space for sitting, so it’s a lot of standing and eating or taking parcels away. Our family has been doing this for years, and we don’t really know any other way to work. It’s a simple life, flipping dosas and chatting with the folks who stop by. We aren’t looking to change much about how we operate.
