We are located at Plot No. 8 in the Ecstasy Building, right on Sangam Press Road. If you know Kothrud, we are right across from Siddharth Towers. Making ice rolls is a bit different from the usual stuff because we do it right there on the cold plates while people watch. It’s a lot of scraping and chopping, which can get quite tiring for the arms after a few hours. The Ecstasy Building has a lot of energy, and being on Sangam Press Road means there are always students and office folks walking past. The shop itself is quite open so you can hear the traffic and the people talking outside. We spend a lot of time keeping those metal plates perfectly clean, as any little bit of stuff left over ruins the next batch. Sometimes the machines act up or the frost doesn't form quite right, and we have to fiddle with the settings. It’s not a corporate job where everything is scripted. We just talk to the people who come in while we work the spatulas. The evenings are usually the most hectic, and the noise of the scrapers hitting the metal fills the whole space. It gets pretty loud in Kothrud during the rush hour, and we’re right in the thick of it. We just keep our heads down and keep rolling. It’s a bit messy and loud, but it’s how we run things here.
