Evas Kitchen is located over in Dhayari, specifically at Baragani Mala. We’re tucked away at Survey No. 128. It’s a busy place, especially in the mornings when we start getting everything ready. You can usually smell what’s cooking from down the road. It’s not a huge commercial facility, just a practical space where we handle all our food preparation. There’s a lot of banging of pots and the sound of water running throughout the day. We have a small team of people who have worked together for a long time. We know each other's habits and how to stay out of the way when things get hectic. The floor can get a bit slippery if we aren't careful, so we’re always mopping. We don’t have a fancy dining room because that’s not what we do here. We focus on the cooking and the orders. Sometimes the vegetable delivery is late and we all have to scramble to stay on schedule. It’s part of the job. We use big stoves that put out a lot of heat, so we keep the fans going at full speed. By the end of the shift, we’re all pretty tired and smell like spices. We’ve been at this spot for a good while and the neighbors seem to like having us around. We just try to keep things clean and keep the food moving out the door. It’s hard work, but it’s what we know how to do.
