Out here in Karve Nagar 11, things are usually moving pretty fast. We have this spot where the smell of the cooking stays in the air all day long. It’s mostly about keeping the pots going and making sure we don’t run out of ingredients before the evening crowd shows up. I spend a lot of time just watching the steam rise from the big heavy lids. It gets really humid inside when we are busy. We don't have a big team, just a couple of us doing the chopping and the stirring and the serving. The tables are basic and we don't bother with much decoration on the walls. People come here because they know where we are, not because of some big sign or lights. I’ve lived in this area for a long time, so I know which neighbors like their food a certain way. Sometimes the supply truck is late and we have to scramble to get things ready, which is always a bit stressful. The floor is made of plain grey stone and it’s seen a lot of shoes over the years. We close up when the food is gone, which changes every day depending on the weather or if there's a cricket match on. It’s a tiring job but it keeps us busy and pays the bills. Sometimes I think about painting the walls a new color but then the rush starts and I forget all about it. Nothing more to it than that.
