Down on Wakad C G Road, you’ll find Dosa Delicious. It’s a small kitchen with a big tawa that stays hot all day. We start grinding the batter the night before so it’s ready. It’s a lot of work getting the consistency right, but we’ve done it so many times it’s just habit now. The shop isn't much to look at. A few plastic tables are available and the floor is concrete. We deal with a lot of steam and the smell of fermented rice and lentils. My wife handles the orders while I stay at the stove. It gets pretty sweaty in the back during the lunch hour. No big menu is offered, just the things we know how to make well. Sometimes we run out of coconut chutney before the day is over, and customers get a bit annoyed. We just tell them we’ll have more tomorrow. The traffic on C G Road is always loud, so we have to shout a bit to hear the orders. We’ve been here in Wakad for a while and seen other shops come and go. We just keep flipping dosas and cleaning up at the end of the night. It’s not a fancy life, but it’s our business. Keeping the prices fair is important so people can come back a couple of times a week.
