Dilkhush Chinese Fast Food

If you go down to Camp Nagdevi at number 847, you will find Dilkhush Chinese Fast Food. It is a narrow spot and the sidewalk outside is usually crowded with people and parked bikes. We have a big wok that sits over a high flame, and you can hear the scraping of the metal spatula against the pan all evening long. The steam from the boiling water makes the windows foggy when it is raining outside. We don't have many places to sit, just a few plastic stools that we put out on the edge of the road. People don't seem to mind the heat or the noise of the traffic right next to them. We use a lot of chopped garlic and ginger, and the smell stays on your skin for days. The lights inside are those long white tubes that flicker sometimes when the voltage drops. Nagdevi is a busy area, especially on the weekends, so we have to work fast to keep up with the orders. Sometimes we mix up an order when it gets too frantic, but we just fix it and keep going. We don't have a computer or anything, we just write the bills on small scraps of paper and keep them on a spike. When we close up, the whole place smells like soy sauce and fried oil. We just scrub the counters, lock the rolling shutter, and head home tired.
