Chatpatti Dilli is located at G/18 on the Wanowarie Navagam Road. It’s a small place, but we keep the burners going pretty much all day. We try to bring a bit of that North Indian style to the neighborhood, so there’s always the smell of spices in the air. The Navagam Road gets quite a lot of traffic in the evenings, and that’s when we’re the busiest. People stop their bikes right outside and wait for their parcels. The kitchen gets cramped when all three of us are in there trying to fry things and pack them up at the same time. We use a lot of onions and chilies, so someone is always chopping something on the wooden blocks. The floor gets a bit dusty because of the road right outside, but we sweep it out every few hours. We don’t have much room for sitting, so most folks just stand around the high tables or take their food to go. It’s not the quietest place to eat, but it’s lively. We’ve had some trouble with the signage lately, but people seem to find us just fine by the smell of the tawa. It's just a regular street-side shop doing what it can to keep the regulars happy with some spicy snacks. We start our prep early in the morning, getting the dough ready and making sure the chutneys are fresh. It’s a long day that usually ends late at night when the last of the street traffic finally dies down.
