Boulevard

Boulevard is located right inside The Orchid Hotel over in Baner Gaon. It’s a big place, and we have a lot of space to cover every shift. We start very early, setting out the plates and getting the coffee ready for the breakfast crowd. Most of the people we see are travelers who just arrived from the highway or business folks with their laptops already open. The windows look out towards the road, and you can see the morning traffic starting to build up. We have to keep the floor polished and the tables perfectly straight, which takes a lot of time. It’s a bit more formal than a roadside cafe, but we try to keep things friendly. The kitchen is huge, and there’s always a lot of shouting and clattering of pans going on behind the scenes. We spend our days refilling water glasses and clearing away plates. Sometimes the weather in Baner gets really hot, but it stays cool inside the hotel. We’ve had all sorts of people stay with us, from families on vacation to people just passing through for a night. It’s a lot of work to keep a place this size running smoothly, and we are usually pretty tired by the time our shift ends. We don't do anything too fancy; we just focus on the basics of a good meal and a clean table. It is just how we do things here.
