Our kitchen is tucked away in Mohit Heights over in Agarwal Colony. If you know Babajaan Chowk in Bhawani Peth, you’ve probably walked right past us without realizing it. Most of the time, the air around our spot smells like roasted cumin or frying onions. We do a lot of cooking for local gatherings and weddings. It’s a lot of work starting at four in the morning to get the big pots going. We have these massive burners that keep the place pretty warm, even in winter. The floor is usually a bit slippery from all the prep work, but we keep it as tidy as we can. We’ve got a bunch of regular guys who help with the chopping and the cleaning. It’s not a quiet job. There’s always someone shouting for more salt or asking where the ladles went. Moving the big containers of curry into the vans is the toughest part. We’ve been at this address for a good while now. The neighbors in Bhawani Peth know us for the noise of the vegetable crates being unloaded. We don't have a fancy office or anything. Just a desk with a lot of old notebooks where we write down the orders. It’s a busy life, especially during the wedding season when we barely get any sleep. We just keep the stoves burning and make sure the food is ready on time for the guests.
