If there is a problem, we just talk about it and fix it. The evening rush is the most intense part of the day. The noise of the traffic outside mixes with the noise of the fans inside. We have a lot of regular customers who live in the apartments nearby. They come in for a quick meal when they don't want to cook. We don't use any fancy language to describe what we do. We just make food and serve it. Sometimes we make mistakes and have to apologize. It’s a human business. By the time we lock the doors at night, we are all ready to sit down. It’s a repetitive life, but there is something good about the routine. We just keep going every day, hoping the next day is just as steady.
