Our restaurant group operates out of Ramwadi in Pune. We are at the Srushti Centre, occupying units C1 and C2. It’s a busy spot near the main road. Being in the food business in a place like Pune means you are always in a rush. The morning starts with checking the supplies that arrived in the night. If the tomatoes are smashed or the milk is late, it throws everything off. We spend a lot of time in the back where the real work happens. It’s not like the movies where everything is calm. There is a lot of shouting and the sound of clinking plates. We serve a lot of office workers who only have thirty minutes for lunch. They want their food fast and we try to give it to them. The floor is usually a bit slippery by the end of the shift. We just mop it up and get ready for the dinner crowd. We don't have a marketing department. We just rely on people liking the food enough to tell their friends. The parking in Ramwadi is a constant struggle for our customers. We feel bad about it, but there isn't much we can do. It’s just how the city is built. We keep the stoves hot and the doors open. It’s hard work, but we are used to it. Every day is just another shift to finish.
