A1 Sandwich

You can find A1 Sandwich over on Bora Bazar Street in the Deccan Gymkhana area. It is a small shop, really just a counter with enough space for us to work behind it. We spend the whole day slicing up bread and vegetables. Our knives have to stay sharp because of how much we use them every hour. It gets incredibly busy during the lunch rush when all the students and office workers come out at the same time. We don’t have much room to store things, so we have fresh supplies brought in almost every single day. The bread arrives early and we go through a lot of butter and chutney before the sun goes down. Sometimes the line of people goes right out the door and onto the sidewalk. We try to be as fast as possible so nobody has to wait too long. It isn't complicated food, just sandwiches made the way we’ve always made them. We’ve been at this long enough that we don’t even need to think about the steps anymore. Our hands just do the work while we talk to the customers. The noise from Bora Bazar Street is always there in the background. It is a bit messy with crumbs and vegetable scraps, but we sweep up whenever we get a quiet moment. It’s just a regular place for regular people to get a bite. We don't use fancy packaging, just simple paper. It’s been this way for years and we don't plan on changing much.
