A J Paneerwala Factory

A J Paneerwala Factory is on Dharamshi Street in Panvel. It is a busy place starting very early in the morning when the milk trucks arrive. We have these big stainless steel vats where everything happens. The air is always thick with steam and that heavy smell of boiling milk. It gets quite warm in here, especially in the summer months. We spend the whole day moving between the cooling tanks and the pressing area. The floors are almost always wet because we are constantly washing things down with hoses to keep the place clean. We cut the paneer into blocks by hand using long knives. It is a repetitive kind of work, but you get used to the rhythm of it. We do not have a big office or anything, just a small desk in the corner where we keep the delivery books and the phone. Most of our day is spent making sure the blocks are the right weight before they get wrapped up in plastic and sent out. The delivery guys are always in a hurry to get the crates onto their bikes or into the small vans. Panvel can be a bit loud with the traffic outside, but inside the factory, it is mostly just the sound of running water and the clinking of metal cans. We just keep doing what we do every day without much fuss. It is a simple operation and we like it that way.
