We are set up at Shop No 5 on the Main Road in Vaishali, Pitampura. If you walk by during the colder months, you can usually smell the jaggery cooking from a distance. We specialize in rewri and gajjak, which are the kind of things people crave when the weather gets a bit chilly. The shop isn't very large but we pack a lot into it. There are tins and boxes stacked everywhere. Gulab Rewri & Gajjak Wale has a lot of history with the local families around here. We spend our days making sure the crunch is just right and the sweetness isn't too much. It’s a sticky business sometimes. We have workers in the back who have been doing this for years. They know the exact moment to pull the sugar. On weekends, the shop gets really crowded with people picking up boxes for their relatives. We try to move fast but sometimes there is a wait. It’s not a modern cafe with tables; it’s a place where you come to get your sweets and carry them home. We use simple packaging because the taste is what matters most to us. My hands usually smell like sesame seeds by the end of the shift. We are right on the main road, so we see a lot of people passing by every day. It’s a good spot and we like being part of the winter traditions in Pitampura. We just keep the stoves going.
