It is pretty quiet here at Lake View Apartment in Rohini, Sector-9. If you walk up to room 109, you might smell something sweet, but mostly it just looks like any other home in this block. Chocolate Mona Nisha isn’t a big factory or anything. We have some tables set up and a few fridges that stay running all day and night. It’s important to keep the temperature right or everything goes soft, which is hard during the Delhi summers. We spend a lot of time tempering the chocolate and pouring it into the little trays. Sometimes the neighbors pop by just to see what’s going on because of the boxes we carry in and out. The kitchen area gets crowded when we have a lot of wrapping to do. We sit around the main table with the silver foil and the colorful papers, just folding and taping for hours. It’s a lot of manual work. The view of the lake from the apartment is nice, but usually, we are too busy looking at the scales or checking the timers. We try to keep the noise down so we don’t bother the people living next door. It’s a small operation, really. Just a few of us making sure the batches are done on time. It feels more like a workshop than a business most days. We keep our supplies tucked away in the cabinets and try to stay organized in the small space we have here.
