Roshni Egg Roll Corner

We've been here in Janakpuri for a while now. Most people just call us the egg roll place near the corner. It gets pretty busy in the evenings when everyone is heading home from work or just hanging out. We started small, just making rolls for the neighbors. There’s not much to it, really. We just crack the eggs, fry the parathas, and try to keep up with the orders. Sometimes the line gets long, but we do what we can. The kitchen isn't fancy. It's just a regular spot where you can grab a quick bite. My brother helps out on the weekends. We see a lot of the same faces every day. It's nice knowing the people who live around Janakpuri. Sometimes we run out of onions or some sauce late at night, and that’s just how it goes. We don't have fancy chairs or anything, just a few stools and the smell of fried dough in the air. People seem to like the way we do things, or maybe they’re just hungry. Either way, we’re here most days from noon until late. It's hard work, standing by the stove all day, especially when it’s hot outside. But it keeps us busy. We just focus on making the rolls the way we’ve always done. No big changes or anything. We aren't some big brand. We just want to make sure the food is ready when people come by after a long day.
