Nanking Chinese Restaurant

Nanking Chinese Restaurant is over in the Sjti Complex on Residency Road. This is the Sadar Bazar area of Nagpur, so it’s always packed with people shopping. Being in a complex means we have neighbors on both sides and it can get a bit cramped inside. We have been here for a long time. The kitchen is small but we manage to get everything done. Most of the day is spent chopping vegetables or cleaning the rice. In Nagpur, the summers are very hot, so the kitchen feels like an oven some days. We have some old fans that help a bit. The customers are mostly people who work in the market or families out for the evening. We don't really do anything special with the decor, it’s just plain walls and some old pictures from when we first opened. The plumbing in these old buildings can be a bit tricky, so we are always keeping an eye on the sinks and pipes. We get our supplies from the market nearby, so things are usually fresh. It’s a lot of work to keep the place clean because of all the soot from the woks and the dust from Residency Road. Sometimes we run out of things if the market is closed, and we just have to tell people we can't make certain dishes. It’s just how it is running a restaurant in Sadar. We keep the doors open and wait for the dinner rush every night.
