Mayan Kitchen is over at Plot No-182/4 in the Sri Govind Complex on Gandhi Road. We spend most of our time in the back, cooking and getting everything ready. The complex is a bit of a hub, so there is always a lot of foot traffic passing by. Our kitchen isn't huge, but we have everything we need to make good food. It gets pretty hot and noisy when the stoves are all going, especially during the lunch rush. We don't have a fancy dining room with expensive furniture. It’s more of a practical space where the focus is on what’s being served. Gandhi Road is usually packed with cars and people, which keeps us on our toes. We don’t spend money on big ads or glossy menus. We just write down what we have and get to work. Most of our regulars are people who work nearby and just want a decent meal without waiting too long. Sometimes we run out of things earlier than expected, or a delivery is late, but we just roll with it. It’s a small operation, and we like it that way because we can keep an eye on everything ourselves. If you come by, you’ll probably smell the food before you see the sign for Sri Govind Complex. It's a busy, honest little kitchen that doesn't try to be something it's not. We just keep the pots boiling and the plates moving for whoever walks through the door.
