Down here on Mandayan Asari Lane, things stay pretty crowded most days. Madura Chicory Manufacturing Company is right in the thick of it on Town Hall Road. If you know the area, you know how the traffic gets. We’ve been operating out of 15-A for a long time. It’s a tight space but we make it work. The smell of roasted chicory is always hanging in the air around our door. Some neighbors say they can tell what time it is just by when the ovens start up. We have a small crew. Usually, it’s just a couple of us handling the grinding and the packaging. The floors are old stone and we’ve got bags piled up almost to the ceiling sometimes. We don't have a big fancy sign or anything. People just know the blue door. We spend a lot of time fixing the old belts on the machines. They’ve been running forever and need a bit of grease and patience. It’s loud inside when everything is going at once. We usually have the radio playing in the back, though you can barely hear it over the grinders. When a shipment comes in, the whole lane gets blocked for a minute. We try to be fast about unloading so we don't bother the other shops. It’s just a normal local business doing what we know how to do and making sure the orders are filled.
