You can find Sartaj Bikaneri Misthan Bhandar over on Himalaya Marg in the Jawahar Nagar Camp area. It’s a lively spot with a lot of people walking around. We’ve been making Bikaneri style sweets for a long time. The recipes are just what we learned from our elders. We don’t use any special machines, mostly just hand work. The shop gets very crowded during the holidays, and sometimes we have to tell people to wait outside. It’s a bit chaotic, but that’s part of it. Himalaya Marg is a good location, though the traffic can be a mess. We try to keep the glass cases clean so people can see what we’ve made for the day. Sometimes the colors of the sweets don't come out exactly the same every time, but they taste fine. We’re not a big corporation, just a local Misthan Bhandar. We stay open late most nights because that's when people want something sweet after dinner. The floors are stone and they stay cool, which is nice in the heat. We’ve got a couple of benches if someone wants to sit for a minute, but most people just take their boxes and go. It’s just how we do things here in Jawahar Nagar. No frills, just sweets and a lot of hard work in the kitchen. We deal with the vendors and the heat every single day to stay open.
