If you’re ever near Samrala Chowk, you’ve probably seen Sanghu Sweet. We are right in the middle of all that chaos. It’s a very loud spot with all the buses and cars constantly honking. Our shop isn't much to look at from the outside, but we keep it busy inside. We’ve got the glass cases filled with whatever we made that morning. We use a lot of milk and sugar, obviously. The floor is made of old stone and it’s seen a lot of feet over the years. We don't have a big staff, just a few of us who know the recipes by heart. We don't write anything down. It’s all just in our heads. Sometimes we run out of certain things by the afternoon, and we just tell people to come back tomorrow. We aren't a factory, so we can only make so much at a time. The air in here is thick with the smell of ghee. Some people like that, some don't, but it’s just the way a sweet shop smells. We have a small sink in the corner and a few stools that are a bit wobbly. It’s not a place for a fancy dinner. It’s just a place to get some sweets. We’ve been here long enough that we don't need to explain ourselves to anyone. We just open the shutters and start the day and see who comes in.
