Azamgarh Muttan The Plaza

We are over at 53/6 in Indira Nagar, right in the Kailash Kunj Market. It is a local spot in Lucknow where people come to grab a meal without any grand expectations. The "Plaza" name might sound a bit big, but we are actually a pretty modest setup. We’ve got our kitchen where we prepare everything fresh, and the dining area is just big enough to handle the daily crowd. Most of the people who eat here are locals from the neighborhood or shopkeepers from the market. We don't use any complicated machinery or fancy cooking techniques. It’s just traditional pots and pans and a lot of patience. The market is always a bit noisy, and that energy flows into our shop too. We have been here for a while, so we know the names of many of our customers. There isn't any polished service here; we just hand you your food and let you enjoy it. Our walls are plain and the floor is just stone, because we think the focus should be on what’s on the plate anyway. We spend a lot of time cleaning up and getting ready for the next day's service. It's hard work, especially in the heat of the summer, but it is what we know how to do. We just keep our heads down and keep the stoves lit. There is always a pot of something bubbling on the back burner.
