Cafe Black Jack

Being near Sharma Hospital in Swaroop Nagar means things are always moving around here. Cafe Black Jack is located at 113/340A, and it’s a pretty standard setup we have. Most mornings in Kanpur start early for us, usually before the sun is fully up, just to get everything set for the day. We spend a lot of time checking the stock and making sure we didn't run out of anything from the night before. The 208002 area is quite active, so there’s always a bit of noise from the street coming in. We keep the place simple. There are a few tables, some chairs, and the counter where we handle the orders. It’s not a complicated operation. Sometimes the electricity goes out for a bit, which is just how things are in this part of town, so we keep some candles or a torch handy. We mostly focus on getting things done without making a big deal out of it. Most of the people who come in are either coming from the hospital or they live in the nearby buildings in Swaroop Nagar. We know most of the regulars by what they usually order. It gets a bit crowded in the afternoons, so we spend a lot of time clearing plates and trying to keep the floor clean. It is a lot of work, but we are used to the rhythm of it by now. We just stay on top of the basics and keep the kitchen going until the evening.
