Hariom Ratlami Jhare Wale

You can find us at 67/1 in Dolatganj, just behind the Hanthi Pale area. It is a very old part of town and the streets are narrow and always full of people and scooters. We make jhare and other snacks right here in the back of the shop. The smell of frying oil and spices usually fills the whole lane by mid-morning. It is a traditional kind of setup with big iron vats and plenty of room for cooling the snacks on large trays. We don't have any fancy signs or modern decor, just the glass counters where we display what we have made for the day. A lot of the people who stop by are locals who have been eating these snacks since they were kids. We keep the same recipes and don't really change how we do things. It is hot work being near the stoves all day, especially in the summer months when the air just sits still in the alley. We start quite early to make sure everything is fresh for the morning rush. Sometimes the line gets a bit long but people are patient. The shop has been in the family for a while and we just continue the work as it was taught to us. There isn't much to it besides hard work and staying consistent with the taste that people expect. We just keep frying until the bins are full and the customers are sorted. It’s been this way for years.
