Our bakery is at F-1 in the Kavi Nagar Industrial Area. You can usually smell us before you see us. The scent of baking bread and biscuits travels pretty far down the street. We start our ovens very early, long before the sun even comes up. The heat inside is no joke, especially in the summer months. We move fast to get the trays in and out so nothing burns. We’ve got big mixers that take up a lot of the floor space. There’s always flour on the floor, no matter how much we sweep. It’s a busy place with people moving back and forth with carts. We don't have a fancy storefront here; it’s mostly just the production area and a small space for loading the vans. The vans leave early to get the fresh bread to the shops. Sometimes the dough doesn't rise just right because of the weather, and we have to start a batch over. It’s frustrating, but that’s just how baking goes. We aren't a big corporate chain. We’re just a bunch of people who know how to work an oven. The Kavi Nagar area is always noisy with other factories, but we’re used to it. We keep a pot of tea going all day for whoever needs a break. It’s a straightforward job, and we take it one batch at a time.
