Modi Kitchen sits at 386, Kirana Mandir, and it’s been there for a good while now. The street outside is usually crowded with people going about their business, and we are right in the middle of it all. Inside, it’s mostly the sound of burners going and knives hitting cutting boards. It isn't a place with a lot of fancy decorations or anything like that. We mostly focus on getting the food ready and making sure the kitchen stays clean enough to work in. Sometimes the heat from the stoves gets to be a bit much, especially during the summer months when the air doesn't seem to move at all. We have a small crew, mostly just local people who know how to work fast when the orders start coming in. There’s always a crate of vegetables waiting to be peeled or a sink full of pots that need scrubbing. It’s the kind of work that keeps you on your feet all day. We don't spend much time on the computer or doing big meetings. Most of our day is spent right there at the counter or near the stove. The building itself is old, so we have to deal with the occasional leak or a temperamental light switch. It’s just a regular kitchen doing what kitchens do, serving the neighborhood and keeping things moving. We like the rhythm of it, even on the days when everything feels a bit chaotic.
