Turab Nagar is one of those markets where you have to squeeze past people to get anywhere. At number 401, Lala Ji Chaat Corner is right in the thick of it. We have a big tawa that stays hot all day long, and the smell of roasting potatoes is everywhere. It’s not a fancy place to sit down; most people just stand on the edge of the road with their plates. We go through a lot of tamarind water and green chilies every day. My hands are usually stained from the spices, and the heat from the stove makes it hard to breathe sometimes.
