We are based inside Hotel Nilgiri’S over in Kagal Nagar, which is a pretty active part of Sonari. Being situated in a hotel means there is always something going on around us. The kitchen stays busy from the early morning hours when we start prepping for the day’s orders. We aren't a massive catering corporation with hundreds of employees. It’s a smaller team here, and we all end up doing a bit of everything, from peeling bags of potatoes to cleaning the stoves at night. The smell of different gravies and spices is always hanging in the air. Sonari is a good place to be because we are close to our suppliers, but the traffic can be a real headache when we are trying to get the food out to a client. We don't have a separate office for marketing, we just work out of the back where the action is. Sometimes the heat in the kitchen gets to be a bit much, but that’s just part of the job. We don’t use fancy language to describe what we do. We just cook the food, pack it up, and get it delivered. There are days when things go wrong, like a burner stopping or a delivery being late, but we just deal with it as it comes. It’s a messy, loud, and tiring business, but it’s what we know how to do best here at the hotel. We keep the pots moving every single day.
