Sonam Bakers is over at Plot No. 22 in Gali No-4 of the Rasid Market Extension. It’s a very local neighborhood, and the street is so narrow that you can almost touch the walls on both sides if you stretch your arms out. Our bakery is a simple setup with a couple of big ovens that we’ve been using for years. The smell of fresh bread usually fills the whole Gali by six in the morning, which is when we’ve already been working for a few hours. It gets very hot in here once the ovens are going, so we usually have a big pedestal fan blowing on us while we work. We don't have a fancy glass display or a marketing team. We just put the buns, biscuits, and rusks out on the counter as they come out of the heat. The floor usually has a dusting of flour on it, and our clothes do too. People from the nearby houses just pop their heads in to see what’s fresh and have a bit of a chat. We aren’t trying to be a big chain or anything like that. We just like making basic things that people in the neighborhood need for their tea. Sometimes a batch of cookies stays in a minute too long and they’re a bit dark, but people still buy them because they know they’re made right here. It’s a simple, honest way to live.
