You can find us at 181 Madangeer, which is quite close to Pushpa Bhawan in New Delhi. It’s a very active part of the city, and there’s always something happening right outside our door. We’re in the food business, so our days start pretty early. We have to get everything ready before the morning rush. It’s not a polished, high-end restaurant kitchen; it’s a practical workspace where we get things done. The office part is just a small corner with a desk and a lot of ledgers. We spend a lot of time talking to suppliers and checking the quality of the vegetables and grains that come in. Madangeer is a crowded neighborhood, so getting deliveries in and out can be a bit of a puzzle sometimes. We’ve learned which times of day the traffic is worst and try to work around it. Our staff is mostly local people who have been with us for years. We don’t use any corporate talk here. We just focus on making sure the food is prepared right and the orders go out on time. There’s always a lot of cleaning to do, which keeps us busy. We sit on plastic chairs during our breaks and share a bit of gossip. It’s a humble place, but it works for us.
