Zinzi Restaurant ,Bandra , Mumbai,

We have been running Zinzi Restaurant for a good while now. Most people probably know our name from the Bandra side of things over in Mumbai, but we have this strong connection to our address in Puri, Orisa too. The place there is Ghoradia, Via-Delang, and that is where we handle a lot of our back-end stuff. Honestly, it is just a group of us trying to get the food right every single day. The kitchen gets really hot in the afternoons, and there is always something that needs fixing, like a leaky tap or a light bulb that keeps flickering. We started out small and stayed that way because it is easier to handle things ourselves. In Mumbai, the traffic is always loud outside, but inside we just focus on the orders. Then you have the Puri side, which is a bit different and much quieter. We spend a lot of time talking about which ingredients are coming in fresh. It is not some big corporate chain with a fancy manual. We just do things how we learned from our own families. Some days are slow and we just sit around talking about the weather or the cricket scores. Other days, it is a total mess and we are running around like crazy. We do not have a big vision statement. We just open the doors, sweep the floor, and start the day. It is a job, but it is ours.
