So, we are Yo China Rajouri Garden, but you will actually find us over at H.No.203-C in Vikaspuri. It’s a bit of a trek if you are coming from the main Rajouri market, but this is where the kitchen is actually set up. The space is inside JG-III and it feels like a regular house from the outside because it is one. Inside, we are busy with orders and food prep most of the day. You can usually smell the garlic and ginger from the street before you even see the door. It’s a lot of chopping and frying all through the afternoon and evening hours. We have a few delivery bikes parked out front on the curb most of the time. The kitchen gets pretty hot, especially when the big burners are all going at once during the rush. We don’t have much of a seating area here for people to eat, it’s more about getting the food packaged up for the riders. Sometimes the neighbors complain about the noise from the delivery bikes, so we tell the guys to park neatly and be quiet. It’s a bit chaotic when the dinner rush hits at seven. We’ve got stacks of containers and bags ready to go on the counters. We use a lot of fresh veggies that we get from the market nearby. It’s just a group of us trying to keep up with the orders and making sure things are done right.
